The oldest sweetener in history, also called sapa or saba,
it is an excellent condiment for desserts, fruit and meats. It is derived from
slow cooking of the grape must over a direct flame.

Grape varieties: Grillo, Catarratto and Inzolia
Cultivation area: Marsala and Mazara del Vallo
Breeding: Marsala sapling or counter-espalier, in dry conditions

Perfume: Intense, of cooked fruit
